Mediterranean Chickpea Salad

A simple red wine vinaigrette with tons of fresh herbs anchors the salad which is made up of chick peas, roasted peppers, sun dried tomatoes and red onions that I marinated slightly in red wine vinegar to take the bite out and soften them a bit and it’s all topped with crumbled feta. It’s excellent on its own, with a can of tuna added in or as a side to any protein. Either ways, you’re going to love it.

Mediterranean Chick Pea Salad

1/4 cup red onion, chopped

2 tbls red wine vinegar

1 tbls honey

1/2 tsp salt

1/4 tsp black pepper

1/3 cup chopped fresh herbs (I used parsley, dill, basil, and mint

4 tbls extra-virgin olive oil (I used the oil from the sun dried tomato jar)

1/4 cup chopped sun dried tomatoes

1/4 cup roasted peppers, chopped

2 15-oz cans chickpeas drained and rinsed

1 small cucumber, chopped

1/2 cup crumbled feta cheese

In the bottom of a large bowl, add the diced onion and the vinegar and let marinated for 15 minutes. This will soften the onions and take some of the bite away.

Instrucciones

Add the oil, honey, salt and pepper and fresh herbs and stir to combine.

To the dressing, add the chick peas, roasted peppers, sun dried tomatoes and feta and stir to combine. Check for seasoning.
