Taco Beef Mince Loaded Sweet Potato Nachos

600 g sweet potato
500 g 5% lean beef mince
120 g avocado
40 g grated Red Leicester cheese
40 g reduced-fat mature cheddar
40 ml sour cream
1 tsp paprika
Salsa (tomatoes, coriander, red onion & lime juice)
Seasonings: smoked paprika, garlic powder, cumin, chili powder (to taste)
or 1 packet taco seasoning for ease
Optional: fresh coriander, jalapeños, extra squeeze of lime
Instrucciones
Preheat oven to 200°C (fan). Slice sweet potatoes thinly, drizzle lightly with oil, season with salt and paprika, and bake for 20–25 minutes until golden and crisp.
While the potatoes bake, cook the beef mince in a pan. Season with taco seasoning and cook until browned.
Once the potatoes are cooked, top them with the beef mince and sprinkle over both cheeses. Return to the oven for 5 minutes, until melted.
Mix tomatoes, red onion, coriander, and lime juice to make the fresh salsa.
Finish the nachos with avocado, salsa, and sour cream.
Serve straight from the tray and enjoy!
