Sheetpan Quesadillas

8 soft taco tortillas (for a half sheet pan-use burrito size tortillas for a full sheet pan and adjust remaining ingredients accordingly)
2 C. shredded rotisserie chicken
1/2 C. cream cheese
1/4 C. Sour cream
1 small can diced green green chilis
1 Red bell pepper, diced small
1/2 C. shredded mexican blend or colby jack cheese
Half packet of taco seasoning (or more if necessary)
Optional toppings:
Extra sour cream, guacamole, jalapenos, salsa, lettuce, black olives, etc
Instrucciones
Preheat the oven to 450F.
Grease a half baking sheet and add 7 soft taco tortillas around the perimeter of the pan- they should be half on/half off the sheet pan as well as one tortilla in the middle.
Mix the remaining ingredients in a separate bowl and spread evenly onto the tortillas.
Fold the tortillas over and add one more tortilla to the middle to cover the chicken mixture.
Add a little more oil to the top of the quesadilla and place another sheet pan to the top of the quesadilla (this keeps the tortillas from flipping up while baking.
Bake for 30 minutes, or until it's crisped to your liking.
Using a pizza cutter, cut into 6-9 squares.
Serve with optional toppings and enjoy!
WARNING: the chicken mixture gets so molten hot so make sure you let it sit for a bit before serving.)
