Slow Cooker Chicken Fajitas

2 pounds boneless, skinless chicken breasts, sliced into thin strips
3 large bell peppers, sliced
1 large onion or 2 small onions, sliced
15 ounces diced tomatoes or salsa
1/3 cup fajita seasonings (see below for homemade blend)
Salt & pepper to season the chicken
3/4 cup low-sodium chicken broth (for Instant Pot only)
2 tablespoons chili powder
1 tablespoon cumin
1 1/2 teaspoons salt (or more)
1 1/2 teaspoon oregano
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon pepper
Instrucciones
Season the chicken with salt & pepper. Add the chicken & all the other ingredients to the slow cooker. Stir to mix well.
Cook HIGH 2-3 hours or LOW 4-6.
Instant Pot
Turn the Instant Pot to sauté. Once hot, add the oil, onion, and bell pepper and cook 3-5 minutes or until soft.
Season the chicken with salt & pepper. Add the seasoned chicken, broth, diced tomatoes, and all the other seasonings to the pot. Stir to mix well. Close lid and seal valve. Set high pressure and cook 8 minutes. When cooking time is complete, quick release pressure.
