Spiced Halloumi and Chickpea Bowl

Serves 2-3

Ingredientes

Olive oil

1 red pepper

1 yellow pepper

1 small red onion

1 tbsp cumin

1 tbsp paprika

1 tbsp chilli powder

Handful cherry tomatoes, halved

1 tin chickpeas

1 block of halloumi, cubed

1/2 avocado, chilli flakes and coriander for garnish

Instrucciones

Add oil to a pan

Add peppers, onion, spices, tomatoes and fry for 3/4 minutes

Add chickpeas and cook for a further 2 minutes

In a separate pan, add oil and fry halloumi until golden brown

Add cooked veggies to a bowl, top with halloumi and sliced avocado

Garnish with chilli flakes and coriander
