Sour Cream Enchilada Bake

Ingredientes

2 - 3 cups shredded chicken

15 oz green enchilada sauce (I used Siete)

2 cups Monterey Jack cheese

6 flour tortillas (could sub with corn tortillas)

1 cup sour cream

Instrucciones

Spread a small amount enchilada sauce on the bottom of a 9x9 pan, just enough to cover the bottom of the pan.

In a bowl, mix together shredded chicken, 3/4 cups of sour cream, about 1/2 cup of enchilada sauce, and 1/2 cup of Monterey Jack cheese. Set aside.

In the pan, layer tortillas, the chicken mixture, a sprinkle of cheese, and a little bit of enchilada sauce.

After your last complete layer, top with one more layer of tortillas. Then stir the remainder of the sour cream into the remainder of the enchilada sauce and pour on top. Sprinkle the top with the last bit of cheese and then bake uncovered at 400 for 25-30 minutes.

Let rest for about 5-10 minutes and then serve!
