Jen’s Hot Sauce

Ingredientes

1 pack Thai Birds Eye chili peppers, tops removed and coarsely chopped

1-2 red peppers, tops removed

5-10 garlic cloves, peeled (to taste)

2-3 tomatoes

2 Tbsp vegetable oil

1 tbsp coarse kosher salt

1 cup white vinegar

1 tbsp sugar

1/4 - 1/2 tsp xantham gum (optional but keeps the hot sauce from separating)

Instrucciones

1. Using gas range, bbq, or broiler; blacken the outside of the tomatoes and red pepper, toss in blender

2. Add peeled garlic cloves to dry pan and roast, add to blender with 1/2 cup water and chilis

3. Add oil to saucepan, then pour in blended sauce and cook on medium heat for a few minutes. Add vinegar, sugar and salt and simmer 5 min.

4. Let cool, pour into container and allow it to age for a few days.

5. Strain through a fine mesh sieve, blend with the xantham gum (if using) and bottle

Notas

I sometimes don’t strain it all the way so it’s a little chunky. Makes about 10 bottles of hot sauce. Keeps 6 months in fridge, shake well before using. Freezes well!

I have also added pineapple before and that was tasty too.
