Sloppy Joe Sandwich Pockets

1 tablespoon unsalted butter or olive oil
1 pound ground beef or ground turkey
2 tablespoons ketchup
1 tablespoon tomato paste
½ teaspoon oregano
½ teaspoon fine sea salt
6 unsliced rolls
Instrucciones
1. Set a medium nonstick or cast-iron skillet over medium heat. Add the butter and swirl to melt
2. Add the beef to the skillet and, using a wooden spoon, break it up into smaller pieces. Continue cooking for 8 to 10 minutes more, or until the meat is cooked through and no longer pink. (If there's a lot of liquid or fat in the pan, you can drain it off.) Add the ketchup, tomato paste, oregano, and salt and stir.
3. Meanwhile, using a small knife, make a slit on one side of each roll. Using your fingers, open the slit to make a pocket in the roll where the filling can go. (Try not to cut all the way through.)
4. Fill each pocket to the brim with the meat, pressing it in gently.
5. Serve the sandwich pockets warm.

NOTES
• These sandwiches are great with simple sides, including pickles, sliced melon, corn on the cob, or roasted potatoes. • If you prefer your Sloppy Joes saucier, add another 2 tablespoons ketchup. • Use mini slider rolls to make these smaller for little kids.
Add a veggie: In Step 2, add 1 cup finely minced green bell pepper and ½ cup minced onion to cook with the beef.
