With black sesame on top 🖤
Blend 2 Fierbois lemon yogurts, 100ml water & 10g Calcium Lactate. Let rest.
Instrucciones
Pour into molds & freeze 1h.
Mix 1 plain yogurt + 100ml Amarena cherry syrup.
Pour on top & freeze overnight.
Alginate Bath
Mix 6g sodium alginate + 1L demineralized water.
Let rest.
Final Touch
Heat your liquid to 60°C.
Dip frozen spheres in the alginate bath for 2 min, then rinse.
Top with half a cherry & black sesame.
With Reverse Spherification, you can trap almost any liquid.
Once in your mouth, it bursts open, the good garnish for a sharp pariring !
