Tofu Satay & Peanut Sauce

Ingredientes

For the Tofu Satay:

400g firm tofu

2 tbsp soy sauce (30ml)

½ tbsp maple syrup (8ml)

¼ cup coconut milk (60ml)

½ tbsp sambal or sriracha (8ml)

½ tsp garlic powder

½ tsp ginger powder

For the Peanut Sauce:

⅓ cup peanut butter (80g)

1 tbsp maple syrup (15ml)

½ tbsp soy sauce (8ml)

2 tsp lime juice (10ml)

1 tsp rice vinegar (5ml)

1 garlic clove, grated

1 tsp freshly grated ginger

⅓ cup warm water (80ml)

For Toppings:

Crispy onions

Chili crisp

Green onions, chopped

Instrucciones

Drain excess water from the tofu by pressing it with a tofu press or between two plates with a heavy object on top (like a can of tomatoes) for 20 minutes.

While the tofu is draining, mix the marinade ingredients: soy sauce, maple syrup, coconut milk, sambal, garlic powder, and ginger powder. Stir until smooth.

Preheat the oven to 230°C

Cut the tofu into 1 cm cubes. Place them in a dish and coat with the marinade using a baking brush or spoon. Let marinate in the fridge for at least 20 minutes.

Skewer on the tofu cubes and bake for 20 minutes. Flip, coat them in more marinade and bake for another 10 minutes.

For the peanut sauce, combine peanut butter, maple syrup, soy sauce, lime juice, rice vinegar, grated garlic, grated ginger, and warm water in a bowl. Mix until smooth. Adjust thickness with more water if needed or more peanut butter if too thin.

Serve the tofu skewers with peanut sauce on the side. Garnish with crispy onions, chili crisp, and chopped green onions.
