Shredded Tofu Tacos

Ingredientes

For the Tofu:

1 block tofu, pressed & pad dry

1 tbsp nutritional yeast

1 tsp smoked paprika

1 tsp ground cumin

½ tsp garlic powder

½ tsp onion powder

½ tsp salt

Few cranks of black pepper

2 tbsp soy sauce

2 tbsp olive oil

2 tbsp tomato paste

For the Guacamole:

2 ripe avocados

2 medium tomatoes, deseeded & minced

1 shallot, minced

1 garlic clove, minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt & pepper, to taste

For the Toppings:

3 taco shells or soft tortillas

Pickled onions

Fresh cilantro

Hot sauce of choice (mango chili recommended)

Instrucciones

Preheat the oven to 200°C (400°F).

In a bowl, mix together the nutritional yeast, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, soy sauce, olive oil, and tomato paste to create the marinade.

Shred the tofu using your hands or a fork, then toss it in the marinade until fully coated. Let it sit for 10–15 minutes to absorb the flavors.

Spread the tofu on a baking sheet and roast for 20–25 minutes, stirring halfway, until crispy.

Meanwhile, mash the avocados in a bowl. Stir in the tomatoes, shallot, garlic, cilantro, lime juice, salt, and pepper.

Warm the tacos and assemble them with the spicy tofu, guacamole, pickled onions, fresh cilantro, and a drizzle of hot sauce.
