Jalapeno Lime Shrimp and Rice

1/2 cup rice
1 cup vegetable broth
1 lb. shrimp (peeled and cleaned)
1/2 jalapeno (seeds removed and chopped)
2 garlic cloves (chopped)
1 lime (juiced)
1 tbsp. extra virgin olive oil
1 cup vegetable broth
Salt and pepper (to taste)
Instrucciones
Prepare rice in vegetable broth.
While rice is cooking, heat olive oil in a large saucepan over medium heat.
Add garlic and cook until fragrant and golden.
Add lime juice and jalapeno slices.
Stir in vegetable broth.
Bring sauce to a boil and turn temperature down to a low simmer.
Add shrimp and cook through until pink.
Add cilantro and season with salt and pepper.
Plate shrimp over rice.
Spoon sauce over the shrimp and rice before serving.
Notas
Jenn: I tried this. Didn’t use garlic but used about 1/2 tsp of hing. It was pretty tasty. Think some veggies could be added to the broth when it is coming to a boil (e.g., pepper, zucchini). Broccoli could be too strong. Wonder if celery could be good. I had on rice but rice noodles might be good. It wasn’t spicy at all with one whole med-small jalapeño, could add more to kick it up.
