Bistro Green Salad with Simple Vinaigrette

For the vinaigrette:
1/2 shallot, minced
2 tbsp white wine vinegar
Good pinch of kosher salt, plus more as needed
1 tsp good quality Dijon mustard
3 tbsp olive oil
3 tablespoons vegetable oil
For the salad:
1-2 heads butter lettuce, thoroughly washed and dried
Instrucciones
1. In a bowl, mix together shallot, vinegar, and salt, and let steep for a few minutes. Add the mustard to the vinegar mixture and stir well. Add the olive oil and vegetable oil. Blend the dressing with an immersion blender, then taste. If it seems too sharp, add more vegetable oil and a touch more salt, until the taste is balanced.
2. Dress the lettuce leaves with one-third to one-half of the dressing, mix well, and serve at once. The leftover dressing will keep, covered, in the fridge for a few days.
