Pasta Fagioli (Mac’s)

1 can cannelini beans
1 can kidney beans
1 can diced tomatoes
4 carrots
1 leek
3 stalks celery
1/2 onion
6 cloves garlic
1 bunch dino kale
About 10oz pancetta
Bay leaf
Parmesan rind
About 32oz vegetable broth
1/2 box small pasta (ditalini)
Instrucciones
Pulse carrot, leek, celery, onion and garlic in food processor until minced. Cooked chopped pancetta with a little olive oil and slightly golden. Add the minced veggies and cook for about 10-15 minutes until veggies start to turn golden. Add tomatoes, beans and chopped kale and stir. Add vegetable broth and bring to a boil. Add parmesan rind and Bay leaf and simmer for about 45-60 minutes. Cook the pasta separately and add to soup when ready to eat. Serve with a pinch of red pepper flakes, fresh grated parmesan, a dash of olive oil and a toasted baguette. Enjoy!
