Porter Smoked Salmon Spread

1 tbsp extra virgin olive oil
1 small onion, chopped (about 1/2 cup)
2 garlic cloves, minced
2 ounces porter
10 ounces hot-smoked salmon
8 ounces cream cheese, softened
Chopped fresh herbs such as dill or parsley, for garnish
Instrucciones
Heat the olive oil in a medium skillet over medium-high heat. Add the onion and cook until it softens and begins to brown, about 5 minutes. Add the garlic and cook 1 more minute.
Reduce the heat to medium-low. Carefully pour in the beer. Continue to cook until very little liquid is left in the pan, 1-2 minutes. Remove from heat.
Break the salmon into pieces and place in the bowl of a food processor. Add the cooked onions and any liquid left in the pan. Cover and pulse 3 to 4 times until the ingredients are finely chopped.
Add the cream cheese. Puree on high until ingredients combine into a smooth spread, about 20 seconds. Transfer to a serving bowl and sprinkle with chopped herbs. Store any extra spread in the refrigerator up to 2 days.
