Cheesy Baked Chicken And Veggie Tacos

Ingredientes

You’ll need:

1 lb ground chicken or beef

1 packet taco seasoning, divided

2 cups fire-roasted bell peppers &onion (about ½ bag)

1½ cups shredded cheddar

8 small flour tortillas

Instrucciones

Preheat the oven to 400°F.

Cook the ground chicken or beef in a skillet with ½ packet taco seasoning and ¼ cup water, breaking it up until fully cooked.

Remove the chicken from the skillet. Add the veggies with the remaining ½ packet taco seasoning and ¼ cup water, cooking until heated through.

Warm the tortillas in a skillet or microwave until soft.

Place tortillas on a baking sheet. Fill each with about ¼ cup chicken, ¼ cup veggies, and 2–3 Tbsp cheese, fold over, and sprinkle a little more cheese on top.

Bake for 10 minutes, until the cheese is melted and tortillas are lightly crisp.
