Bean chilli

Ingredientes

1 onion, diced

2 carrots, diced

1 capsicum, diced

3 cloves garlic, minced

1 tbsp olive oil, or use stock instead

1 to 2 tbsp chilli powder

2 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1 tbsp tomato paste

1 can crushed tomatoes (400 g)

2 cans beans (400 g cans), drained and rinsed

1 can lentils (400 g can), drained and rinsed

1 to 1.5 cups stock or water

Salt, to taste

Black pepper, to taste

1 courgette, diced

250 g mushrooms, sliced

1 tsp cocoa powder

Instrucciones

cook veg 8 to 10 minutes; add garlic, spices, tomato paste 1 minute; add tomatoes, beans, lentils, stock; simmer 20 to 30 minutes uncovered; season; finish with lemon or lime.
