Biscoff Blondies

Ingredientes

300 g Biscoff spread

125 g light brown sugar

125 g caster sugar

200 g unsalted butter, melted

3 large eggs

1 tsp vanilla extract

275 g plain flour

1 tsp cornflour

1 tsp cinnamon

100 g Biscoff biscuits

100 g white chocolate

Topping

Biscoff crumbs

30 g white chocolate

20 g Biscoff spread

Instrucciones

Melt 300 g Biscoff spread in 30 second bursts. Pour into a lined 9x9 tin, smooth it out and place into a freezer for 30 minutes.

Preheat oven to a 160 °C.

Mix the sugars in a large bowl. Add in melted butter and mix together untill i thickens (3-5 mins).

Add the eggs one at a time mixing the one in before adding another. Add vanilla and mix.

Sieve in the flours and cinnamon then fold gently. Add crushed Biscoff biscuits and chocolate chips and fold through.

Spoon half of the mixture into a lined 9x9 tin and smooth it out. Remove the frozen Biscoff slab from the freezer and place on top. Cover it with the other half of the mixture and smooth it out.

Bake in the oven for 30 minutes and cool in room temperature for 30 minutes.

Onze cooled melt white chocolate (30 g) and Biscoff spread (20g) and drizzle on. top of the blondie. Sprinkle some Biscoff crumbs and place in the fridge for 4 hours, preferrably overnight.
