Ten Minute Spicy Coriander Lime Noodles

If you love noodles as much as I do, you need to try my take on the forever-trending coriander lime noodles! This quick fix is deeply-savoury yet balanced by a fragrant hit of herbs and spices for chopstick after chopstick of craveable flavours. The best part is you need just a handful of ingredients including Chef’s Choice @leekumkee.india’s Light & Dark Soy Sauce and Vegan Oyster Sauce, which forever remain my pantry staples!

Recipe below serves 2-3 (depending on how hungry you are!)

Cook 200-250 gm noodles of choice until just shy of al dente. Drain and set aside.

Instrucciones

Pour 3 tbsp of sesame oil to a small pan and add:

3-4 cloves minced garlic

1/2 onion, finely chopped

2-3 tsp gochugaru/ chilli flakes

Let it come to a gentle simmer for the flavours to fully infuse.

Meanwhile, add the noodles to a large heat-proof bowl. Then add:

3 tbsp light soy sauce

1.5 tbsp dark soy sauce (or swap with 1 tbsp light soy sauce)

Splash of vegan oyster sauce @leekumkee.india

1/4-1/3 cup chopped basil leaves

1/4-1/3 cup chopped scallions

1/4-1/4 cup finely chopped coriander

2-3 tsp sesame seeds

Juice of 1 lime/ lemon

Pour in the hot infused oil and let it sizzle. Then mix well until noodles are well combined with the spicy lemon-coriander sauce.

Taste and adjust the flavours/ seasonings to preference (e.g. adding more lime juice for zing/ more vegan oyster sauce for a savoury depth).

Serve garnished with more herbs, sesame seeds and lemon slices… and DIVE IN!
