Vampiritos Tostadas

Corn tortillas
Spicy Mexican blend @tillamook (or Monterrey jack)
Steak marinade:
2 lb hanger steak
1/4 c @modelousa
1 orange (juiced)
1 lime (juiced)
1/2 tbsp soy sauce
1 tsp garlic p
1/4 tsp cumin
1 tsp onion p
1/2 tsp smoked paprika
1 1/2 tsp salt
2 tsp salsa búfalo @salsabufalo (the brand not buffalo sauce!!)
handful cilantro
Refried beans:
1 small can pinto beans (strained)
3-4 garlic cloves
2 chile de árbol
1 tsp onion p
1 tbsp oil
salt & pepper to taste
Toppings:
guac
curtido (have a video on this)
salsa (i did roja lemme know if you want this recipe)
Instrucciones
Add your steak to a bowl along with all the marinade seasonings. Mix well let it marinate for at least 1 hour.
In the meantime time prep your other toppings.
For the refried beans heat oil in a small pot. Fry your garlic & then add your chile de árbol. Then add your strained beans and let that simmer for a few mins. Add water, salt, and pepper. Simmer on low for a 10 mins before smashing them up. Adjust seasoning to taste.
Once your meat is ready grill or cook on skillet for 3-4 mins per side until both sides have a nice sear & center is med rare.
Remove from heat and allow to rest for 10 mins.
In the meantime throw your tortillas onto grill or skillet. Make sure they’re pretty dry you want them to toast.
Flip them when one side is hard then top with your cheese & let it melt.
Slice your meat into small cubes.
Now just load your vampiro with whatever toppings you’d like & enjoy babe!
