Baileys Chocolate Mousse Cookie Cups

Ingredientes

For the Cookie Cups:

1 cup (230g) unsalted butter, softened

1 cup (200g) granulated sugar

1/2 cup (100g) brown sugar

2 large eggs

2 tsp vanilla extract

2 1/2 cups (315g) all-purpose flour

1/2 cup (50g) cocoa powder

1 tsp baking soda

1/2 tsp salt

For the Baileys Chocolate Mousse:

1 cup (175g) semi-sweet chocolate chips

2 tbsp (30ml) Baileys Irish Cream

1 1/2 cups (360ml) heavy cream

2 tbsp (15g) powdered sugar

For Garnish:

Whipped cream

Chocolate shavings

Cocoa powder (optional)

Instrucciones

Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined.

Scoop the dough into the muffin tin, filling each cup about 3/4 full. Using a small spoon or your fingers, press down in the center to create a slight indent.

Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and immediately press down the centers again to create a deeper well. Allow to cool completely in the pan.

Prepare the Baileys Chocolate Mousse:

Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth. Let it cool slightly, then stir in the Baileys Irish Cream.

In a separate bowl, whip the heavy cream and powdered sugar to soft peaks. Gently fold the whipped cream into the melted chocolate mixture until fully combined. Chill the mousse for 30 minutes to firm up.

Assemble the Cookie Cups:

Spoon or pipe the Baileys chocolate mousse into the cooled cookie cups.

Top each cup with a dollop of whipped cream, a sprinkle of chocolate shavings, or a dusting of cocoa powder, if desired.
