One-pot Mexican-style Beans

1 white onion, diced
1 red bell pepper, diced
3 garlic cloves, minced
1 tsp ground coriander
1 tsp paprika powder
1 tsp cayenne pepper
1 tsp dried oregano
½ tsp smoked paprika
2 tbsp tomato paste
1 cup rice
2 cans black beans, drained & rinsed
2 cups veggie broth
2 bay leaves
Handful fresh cilantro, chopped
Avocado slices, for topping
Juice of 1 lime
Instrucciones
Heat a large pan over medium heat. Sauté the onion and red bell pepper for 3–4 minutes until soft.
Add the garlic, coriander, paprika, cayenne, oregano, and smoked paprika. Stir for 30 seconds until fragrant.
Mix in the tomato paste and cook for another minute.
Add the rice, black beans, veggie broth, and bay leaves. Stir well and bring to a simmer.
Cover and cook on low heat for 15–20 minutes, or until the rice is fully cooked.
Remove from heat, discard the bay leaves, and stir in fresh lime juice.
Serve with avocado slices and chopped cilantro.
