Main Ingredients:
🍠 3 Medium sweet potato
🍗 1 lb Chicken thighs
🧀 1/2 cup Ricotta salata (crumbled or diced)
🧀 1/2 cup Soft goat cheese (in small dollops)
🌰 8.5 oz Chickpeas (drained)
🥦 2 1/2 cups Broccoli
🧅 1 Red onion
🫒 1 tsp Olive Oil
🧂 Salt, garlic granules, mixed herbs, pepper
🥣 Dressing:
🍦 1/2 cup Low-fat Greek yoghurt
🥄 2 tsp Tahini
🌶 1 Tbsp Cumin
🍋 Juice of 1 lemon
🧂 Pinch of salt
💧 3 tbsp + 1 tsp Water (to thin)
Instrucciones
Add sweet potato, broccoli, onion, chickpeas, ricotta salata, and seasonings to a baking tray. Drizzle with olive oil.
Roast in a preheated oven at 200°C (392°F) for 30 minutes. Then add the chicken and soft goat cheese (in small dollops across the tray) and roast for another 20–25 minutes or until chicken is cooked through and golden.
While baking, mix the yoghurt, tahini, cumin, lemon juice, salt, and water into a smooth dressing.
Drizzle dressing over the tray bake, serve, and enjoy!
