Beef Birria And Veggie Enchilada

Ingredientes

You’ll need:

4-6 tortillas (medium size - flour or corn)

1 package of beef birria

1 cup fire roasted bell peppers & onions (frozen section)

1 jar of enchilada sauce

2 cups shredded cheese

Optional for topping: diced onion, cilantro, sour cream

Instrucciones

Preheat oven to 375°F.

Spread a thin layer of enchilada sauce on the bottom of a baking dish.

Heat the beef birria in a pot on the stovetop according to package instructions. Stir in the fire-roasted bell peppers and onions, cooking until warmed through.

Lightly coat both sides of each tortilla with the birria sauce, then fill with the beef and veggie mixture and some cheese. Roll up and place seam-side down in the baking dish.

Pour 1–2 cups of enchilada sauce over the top and sprinkle with the remaining cheese.

Bake for 20 minutes, until bubbly and golden.
