Spaghetti Aglio E Olio with Cheese Chips

Pasta alla Carrettiera with Frico Croccante
Simple ingredients, bold Italian flavours.
Garlic, chilli, silky pasta and crispy cheese chips.
2 tbsp extra virgin olive oil
3 garlic cloves, thinly sliced
½ tsp chilli flakes
120 g spaghetti
½ cup grated Parmesan & Pecorino
Chopped fresh parsley
A pinch of salt
Pasta water
For the Frico (Cheese Chips)
2 tbsp grated Pecorino or Parmesan
Instrucciones
1.Boil spaghetti in well-salted water until just before al dente.
2.Heat olive oil in a pan and flash fry garlic and chilli flakes for a few seconds.
3.Immediately add a splash of pasta water to stop the garlic from burning.
4.Add the spaghetti to the pan and toss to coat.
5.Turn off the heat, add Parmesan and Pecorino, parsley, and a pinch of salt.
6.Mix well, adding a little pasta water if needed to create a silky sauce.
Frico Croccante
7.Sprinkle grated Parmesan or Pecorino in a non-stick pan (or on baking paper).
8.Cook until golden and crisp, then let it cool to harden.
9.Alternatively bake it, or microwave in 30-second intervals until crisp.
Plate the pasta, garnish with parsley and crispy cheese frico.
