Creamy Tuscan Chicken

Chicken seasoning for marination:
- 1 large Chicken breast sliced in 3, washed and pat dry 
- 1 tsp oil, 
- 1/2 tsp Black pepper 
- salt to taste 
- 1/2 tsp Paprika 
- 1/2- Dried parsley 
- 1/2 tsp Garlic powder 
For the base:
- 1 tbsp-Butter 
- 3 Cloves of garlic diced or minced 
- 2 tbsp- Tomato purée 
- 1 ½ tbsp -Tuscan seasoning ( my own blend ) using 
- Smoked paprika, black pepper, garlic powder, thyme, rosemary, parsley, oregano , basil and salt. 
- 1 Cup of cream 
- 1 Cup of chicken stock 
- Onion 
- 2 handful of spinach finely chopped 
- 4/5 Sliced of sun dried tomatoes 
- 8 Roasted plum tomatoes 
- 1 Cup Parmesan cheese 
Instrucciones
- Marinade the chicken using the spice marination 
- Shallow fry the chicken in olive oil for 6 minutes on each side or until cooked through and leave aside 
- In a pan add butter, onion and diced garlic 
- Add tomato purée, stir in before adding the tuscan spice 
- Mix well to combine all ingredients together 
- Add cream and give it a mix before adding chicken stock to create a smooth base, let the mixture shimmer for 5 minutes on low heat 
- Add spinach and sun dried tomatoes give it a mix 
- Add the fried chicken to the base mixture 
- Add the roasted tomato 
- Add Parmesan cheese 
- Cook the mixture down for 2 minutes 
- Turn off the heat
