Meal Prep Cheesy Fiesta Potatoes

2 russet potatoes (diced)
1 pound lean ground turkey (can substitute lean beef or ground chicken)
4 cups shredded iceberg or romaine lettuce
1 1/2- 2 packets taco seasoning (about 74g total, I use Siete brand)
1/2 cup reduced fat refried beans
1/2 cup pico de gallo (storebought or homemade)
1 small white onion (chopped)
1/4 cup queso of choice
1/2 cup nonfat Greek yogurt
Olive oil spray
1 cup low fat shredded Mexican cheese blend

Preheat- preheat your oven to 425 degrees F.
Prep the potatoes- wash and dice the potatoes into small bite-sized pieces. Peel them if desired.
Season and roast- spray the potatoes with olive oil spray and toss with 1/2- 1 packet taco seasoning. Bake at 425°F for 35–45 minutes until tender and cooked through, flipping halfway.
Cook the meat- while the potatoes cook, brown the ground turkey in a skillet over medium heat.
Add the onions and seasoning- add the chopped onions halfway through cooking. Drain excess grease.
Stir in the second packet of taco seasoning and water according to package instructions. Stir until combined.
Add in your refried beans and stir and mix in until throughly combined.
Assemble the bowls- evenly distribute the roasted potatoes, taco meat mixture, refried beans, cheese, and queso into 4 meal prep containers.
Add fresh toppings- top with pico de gallo and Greek yogurt. Store the lettuce separately and add before serving for the best texture.
