Turkey Meatball Meal Prep

2 lbs lean ground turkey

8 oz. saffron yellow rice package

1 lb green beans

1 medium onion, small diced

2 tbs minced garlic

1 tsp onion powder

1 tsp garlic powder

1 tsp smoked paprika

salt and pepper to taste

1 tbs olive oil

cook the yellow rice according to package instructions

boil the green beans in water until just tender, then remove and cool

heat a pan to medium heat, add oil and 1 tbs minced garlic, and sauté green beans until garlic is toasted; salt and pepper to taste (optional)

combine ground turkey, minced garlic, diced onion, and seasonings listed; divide ground turkey into 12 large meatballs

place the meatballs on a baking sheet and bake at 400F for 20-25 min until internal temp is 165F

build the bowls and store in the fridge for up to 5 days or in the freezer for up to 6 months
