Chicken And Sausage Gumbo

3Ibs chicken thighs (seasoned + browned)
2 Ibs andouille sausage (sliced)
1-1.5 cup flour + 1 cup oil (for roux)
1 onion, 1 bell pepper, 2 celery stalks (diced)
132oz chicken broth
1 16oz @kettleandfire chicken bone broth
2 tablespoons Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne powder
3 bay leaves
Salt + pepper to taste
Cooked rice for serving

Make your roux: whisk flour + oil on medium
heat until deep brown.
Render the fat and brown the sausage.
Remove and put to the side. Then, brown your chicken in the fat from the sausages. Remove and put to the side when done.
Add onion, bell pepper, celery — cook until soft.
Incorporate the roux into the pot with the veggies.
Add water, broth, sausage and chicken, Cajun seasoning, and bay leaves. Simmer 2-4 hrs.
Serve over rice and enjoy that southern comfort!
