Mom’s Oat Bran Chocolate Chip Muffins

1 2/3 cups oat bran
1/3 cup toasted wheat germ
1/3 cup all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup dark brown sugar
5 tablespoons canola oil
1 tablespoon pure vanilla extract
1 egg
2 tablespoons low fat sour cream
1 3/4 cups buttermilk
1/2 cup semisweet chocolate chips
Topping:
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
2 tablespoons sugar
Οδηγίες
- Preheat oven to 425 degrees. 
- Combine oat bran, wheat germ, flour, baking powder, and salt. Set aside. 
- In mixing bowl, combine brown sugar, canola oil, and vanilla extract. 
- Add the egg and mix well. 
- Add sour cream, milk, and buttermilk. 
- Blend in the oat bran mixture and the chocolate chips. (Don’t over mix!) 
- Pour into a greased muffin tin. 
- Blend the butter, sugar, and flour for the topping into a crumbly mixture in a small bowl and sprinkle on to of the muffin batter. 
- Bake for about 13 minutes.
