Rice Dishes
One Pan Honey-cajun Beef Rice

250g Lean beef mince
120g Onion, finely diced
80g Red pepper, finely diced
80g Yellow pepper, finely diced
1 tbsp Cajun seasoning
1 tsp Minced garlic, heaped
1 tbsp Tomato puree, heaped
200g Chopped tomatoes, or passata
1 Beef stock cube
250g Microwaveable Mexican rice, pack
2 tsp honey
20g Shredded mozzarella
30g Light cheddar, grated (I use 50% lighter)
Fresh parsley, to serve

Spray a large pan with oil and fry the onions, peppers and beef mince for 3-4 minutes. Season with cajun seasoning, crumble over the beef stock cube, then mix in the garlic, tomato puree then chopped tomatoes (or passata) and cook on high until its starts to bubble. Mix in the Mexican rice, straight from the back (no need to microwave). Drizzle over the honey then scatter over both cheeses and place under a hot grill to melt (or place a lid over and cook on low for a few minutes). Serve with fresh parsley & dive right in.
