Cauliflower & Potatoes Stir Fry with Bengali Dry Roasted Spi

Golden potatoes and tender cauliflower tossed with aromatic dry roasted spices — a simple, homely stir fry bursting with earthy spices and comfort.

Crispy edges, warm cumin notes, a hint of chili — this is everyday Indian food magic on a plate 🍛💛

For the roasted spice mix

2 tsp cumin seeds

2 tsp coriander seed

6 to 8 dried red chilies (adjust to spice level)

Dry roast all these on low heat till fragrant, then grind into a powder and set aside.

For the stir fry:

2 cups cauliflower florets (medium-sized)

2 medium potatoes, peeled and cut into thick pieces

2 tbsp any neutral oil

1 sprig of curry leaves

1 tsp cumin seed

1 tsp turmeric powder

1 tbsp tomato paste

Salt to taste

A pinch of sugar (optional, for balance)

2 tbsp dry roasted spices (prepared above)

1/2 cup green peas

1 tbsp ghee (optional)

Heat oil in a pan until lightly smoking. Reduce heat and add cumin seed and curry leaves . Let it splutter.

Add potatoes, and cauliflower.

Add the turmeric . Mix to coat everything evenly. Cover and cook on medium-low heat, check in between and give it a toss

fry on medium-high heat to get golden color on vegetables

Then add that dry toasted spices , salt and tomato paste and toss well. Cover and cook in low to medium low tenderness check in between and give it a toss if you see vegetables are sticking to the pan add splash of water

Cook till the cauliflower and potatoes are cooked through then add green peas and sautee for two min

Finish off with ghee

Serve hot with lentil and rice, or enjoy with roti or paratha.
