Coconut Thai Chicken Meatballs
12 Meatballs serves 3-4

500 grams Chicken Mince
1 courgette grated
1 carrot grated
4 spring onions sliced (divided)
3 tsps garlic minced (divided)
2 tsps ginger paste (divided)
1 tsp chilli paste
3 tbsps Soy Sauce (divided)
Carriander: handful
1 egg
1/ cup Panko or breadcrumbs
Juice of 1 lime divided
1 red pepper sliced
1-2 cans coconut milk
2 tbsps red Thai curry paste
1/2 tsp Better Than Bouillon chicken broth
1 Tbspn honey

FOR THE MEATBALLS, in a bowl and mix well:
Chicken
Grated cougette
Grated carrot
Half of the sliced green onions
2 tsps minced garlic
1 tsp ginger paste
1 tsp chilli paste
1tbsp Soy Sauce
1 egg
Half the lime juice
Throw in 1/4 to 1/2 cup Panko or breadcrumbs... to help bind the balls if too "wet" 😄
Mix well and divided into 12, then roll into 12 meatballs
Cook on medium in a frying pan for 10 minutes. Place meatballs aside on separate plate. Do not clean pan.
To the same pan add peppers and fry off for 5 minutes
Add:
1 tsp minced garlic
1 tsp ginger paste
2 tbsp Soy Sauce
1-2 cans of coconut milk
2 tbsp red Thai curry paste
Second half of the sliced green onions
Handful of chopped coriander
Juice of 1/2 lime
1/2 tsp Better than Bouillon concentrated chicken stock
1 tbsp honey
Mix well and leave to simmer on medium for 10 minutes
Add meatballs back into the pan and reduce heat to low and simmer for a further 10 minutes until the sauce begins to thicken.
