1 kg baby chat potatoes
Salt to taste
¼ cup of olive oil
½ tsp paprika
For the dressing
1/2 bunch of coriander roughly chopped
2 stems of dill finely chopped
½ lemon juiced
3 medium garlic cloves
1 tsp chilli in oil
1 fresh chilli finely chopped optional
2 TBS olive oil
Salt to taste
Cracked pepper
Wash the potatoes well, cut in half or quarters depending on the size, and boil them until they have slightly softened, you should be able to pierce them with a knife but should still require cooking.

Preheat your oven to 180.
Remove them from the heat and place in a mixing bowl along with salt, paprika and the olive oil. Toss well to combine and place in a baking dish, and bake for approx 30 mins until they begin to crisp, then turn the heat up to 200 and bake on high for the remaining 15 minutes. To make the dressing, place the garlic in a mortar and pestle along with the salt and crush, before adding it to a bowl along with the chopped coriander, dill and remaining ingredients, mix to combine well. Once the potatoes have finished roasting, add them to a bowl along with the dressing and toss to combine. Serve immediately!!!
