Korean Crispy Chicken Loaded Fries

Chicken:
2 lbs boneless skinless chicken thighs, cubed
2 tsp sesame oil
2 tbs cornstarch + 4 tbs water (slurry)
1/2 tsp gochugaru pepper flakes
1 cup panko breadcrumbs
Fries:
1 1/4 lbs (20 oz.) frozen sweet potato fries (I used Alexia brand)
Sauce:
1 tsp olive oil
1 tsp minced garlic
1 tsp minced ginger
1/3 cup low-sodium soy sauce
1/4 cup rice vinegar
2 tbsp brown sugar
1 tbsp honey
1 tbsp ketchup
1 tbsp gochujang pepper paste
2 tsp sesame oil
1/2 tsp gochugaru pepper flakes
cornstarch slurry (1 tsp cornstarch + 2 tsp water mixed)
1 tsp toasted sesame seeds
Garnish:
green onion
toasted sesame seeds

1.) Air fry chicken: coat in sesame oil, pepper flakes, and slurry before coating in breadcrumbs; cook at 400°F ~20 min until crispy
2.) Cook fries: bake according to package
3.) Make sauce: sauté garlic + ginger in oil on low heat until toasted, add sauce ingredients, simmer on low, and thicken
4.) Toss chicken: coat in sauce
5.) Build: add fries to a plate, top with chicken, and garnish with green onion and sesame seeds
