Thai Basil Beef Inspired Bowl

Chili Crunch Cucumbers (combine all ingredients)

1 english cucumber thinly sliced

2 tbsp chili crunch

3-4 tbsp honey

2-3 tbsp seasoned rice vinegar

2 tbsp sesame seeds

1 tsp toasted sesame seed oil

Salt and garlic powder to taste

Garnishes: crushed peanuts, sliced green onions and sesame seeds

Thai Basil Beef:

2 tbsp beef tallow

1 yellow onion largely diced

1 red bell pepper largely diced

1 green bell pepper largely diced

1 lb lean ground (90/10)

3-4 tbsp fresh minced garlic

2 tbsp ginger paste

3/4 cup sliced whites of green onions

1 ½ cups chopped fresh basil

Salt & pepper to taste

1/4 cup soy sauce

2 tbsp fish sauce

1/4 cup honey

2-3 tbsp brown sugar

Toppings:

Sriracha Mayo

Fresh Chopped Cilantro

Sesame seeds

Note(s): Measurements are estimated, adjust ingredients to your personal preference.

Get a large skillet going over medium-high heat and add in the beef tallow. Once hot, add in the peppers and onions. Let them sauté for a few minutes, mixing frequently then add in the ground beef. Let the beef sear for a few minutes to build some crust.

From there, start breaking up in the beef and mixing it in with the veggies then add in the garlic and ginger. Mix that in then add the green onions and basil as well.

Season with salt and pepper, then add in the soy sauce, fish sauce, honey and brown sugar. Mix well and let cook until everything starts to caramelize and crisp up. Taste and adjust if needed.
