Chinese Take-out Fried Chicken Wings Are Just the Same as Re

The key is the combination of flour, cornstarch and egg that go right into the marinade (no dredging required!) and two trips into the frying oil with a rest in between.

Fried Chicken Wings
Prep Time: 10 minutes
Marinate Time: 2 hours
Cook Time: About 10 minutes
Yields: About 10–12 wings
Ingredients:
– 2 1/2 pounds whole chicken wings (about 10–12 wings, washed and pat dry)
– 1/8 teaspoon black pepper
– 1/4 teaspoon white pepper
– 1/4 teaspoon garlic powder
– 1 1/2 teaspoons salt
– 1/2 teaspoon sugar
– 1 tablespoon soy sauce
– 1 tablespoon Shaoxing wine
– 1 teaspoon sesame oil
– 1 egg
– 1 tablespoon cornstarch
– 2 tablespoons all-purpose flour
– Oil (for frying)

1. Combine chicken wings, black pepper, white pepper, garlic powder, salt, sugar, soy sauce, Shaoxing wine, sesame oil, and egg in a large mixing bowl.
2. Mix everything until the wings are well coated.
3. Add the cornstarch and all-purpose flour. Mix again until the wings are fully coated.
4. Let the wings marinate for 2 hours at room temperature or in the fridge.
5. Heat oil in a deep fryer or heavy pot. Fry wings in batches until golden brown and cooked through, about 8–10 minutes per batch.
6. Drain on paper towels and serve hot.
