Ingredients (makes 4 flatbreads):

1 cup rolled oats

1 cup cottage cheese

2 large eggs

1 tsp baking powder

½ tsp salt

½ tsp garlic powder (optional)

½ tsp dried herbs (optional)

Step 1: Blend the Oats

In a blender or food processor, blend the rolled oats until they resemble a fine flour.

Step 2: Mix Ingredients

In a bowl, combine the oat flour, cottage cheese, eggs, baking powder, salt, and any optional seasonings. Mix until smooth.

Step 3: Cook the Flatbreads

Heat a non-stick skillet over medium heat and pour in a portion of the batter, spreading it into a circle. Cook for 3-4 minutes on each side until golden brown.

Step 4: Serve

Remove from the skillet and serve warm, topped with your favorite spreads or toppings. Enjoy!
