When Life Gives You Lemons, Make Lemon Cake

1 large lemon - boil for 10 minutes

3/4 cup of sugar

1/2 cup of avocado oil (or any vegetable oil)

1/2 cup of milk

3 eggs

2 cup of all purpose flour

2 teaspoons of baking powder

1/2 teaspoon of baking soda

pinch of salt

Boil the lemon for 10 minutes. Cut, remove seeds.

Add to a bowl: lemon, sugar, salt, eggs, milk, oil.

Blend until smooth.

Add flour, baking powder, baking soda and salt. Mix just until combined.

Pour into a greased 9x5 baking pan.

Bake at 350 for 1 hour.

Cool completely.
