Homemade Cream Cheese

8 cups whole milk
5 tbsps lemon juice
½ tsps salt

Pour 8 cups of whole milk into a large pot. Heat over medium-high, stirring frequently, until it reaches a rolling simmer (Do not let it boil)
Stir in the lemon juice, then immediately turn off the heat. Allow the mixture to sit undisturbed for 10-15 minutes to let the milk curdle.
Once it has curdled, pour the mixture through a fine mesh strainer lined with cheesecloth. Make sure to remove any excess liquid.
Transfer the strained curds to a blender or food processor, add the salt and blend until very smooth and creamy.
Transfer to a tight container and let cool for at least an hour. Serve and Devour!
