Chipotle Honey Chicken Bowls

Chicken:
3 lbs boneless skinless chicken thighs
1 tbsp olive oil
1/2 can chipotle peppers in adobo sauce
Homemade Chipotle Seasoning:
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp smoked paprika
2 tsp dried oregano
2 tsp ground cumin
1 tsp salt
1 tsp pepper
Chipotle Honey Sauce:
2 tbsp chipotle adobo sauce
2 tbsp honey
juice of 1/2 lime
Rice:
1 1/2 cups white rice, rinsed
2 1/2 cups chicken bone broth
1 bay leaf
2 tsp olive oil
lime juice
lime zest
cilantro
salt
Beans:
1 can black beans, rinsed
1 cup water
chipotle seasoning
1 bay leaf
Veggies:
2 large bell peppers, sliced
1 large red onion, sliced
spray oil
salt, pepper, dried oregano
Corn Salsa:
1 can yellow corn
1 small can diced green chiles (or 1 diced jalapeño)
1/2 red onion, diced
lime juice
cilantro
salt

1.) marinate chicken thighs with oil, chipotle seasoning, and chipotle peppers in adobo sauce overnight or at least 2 hours
2.) mix together chipotle adobo sauce, honey, and lime juice for the sauce
3.) cook rice in bone broth with bay leaf, then mix with olive oil, cilantro, lime juice, lime zest, and salt
4.) simmer black beans with water, bay leaf, and chipotle seasoning for about 10 minutes
5.) mix together corn salsa ingredients
6.) air fry chicken at 400°F for about 20 min until cooked through and caramelized
7.) sauté peppers and onions until tender and seasoned
8.) cut chicken into bite-sized pieces and toss with chipotle honey sauce
9.) build bowls with rice, beans, peppers/onions, corn salsa, and chicken
