Tuscan Beans

2 tbls olive oil (I like to use the sun dried tomato oil from the jar because it adds so much extra flavor)

1 onion, chopped

3 cloves garlic, chopped

1 pint cherry tomatoes, halved

1/2 tsp salt

1/2 tsp pepper

1 tbls Calabrian chili paste (or 1/4 tsp of dried chili flakes)

1 (12oz) jar marinated artichoke hearts, drained

1/2 cup sun-dried tomatoes, drained

2 (15 oz) cannellini beans, drained and rinsed

1 tbls fresh rosemary, chopped

6 basil leaves chopped

1/2 cup water (or broth)

3 large handfuls of baby spinach

Juice of one lemon

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook a few minutes. Add the tomatoes and season with salt and pepper. Let cook about 4-5 minutes or until they begin to break down. Add the artichokes, sun dried tomatoes and herbs and stir to combine. Add the white beans, water and chili paste and Stir to combine. Cover and reduce the heat to low. Cook for 10 minutes, stirring occasionally. Remove top and add the spinach, allowing the heat of the beans to wilt it.

Stir the lemon juice in and check for seasoning
