Making dessert for yourself might feel like more effort than its worth but this only takes 5 minutes to put together then you can leave it to bake in the oven, plus, I think it’s important to invest in yourself and make something delicious just for you to enjoy. This is a PROPER PUD and I promise you it’s worth it.
And that leftover egg white? You know by now that we’re not an egg white omelette kind team, we’re a cocktail team. Check out my cookie skillet recipe for a great gin sour that would be delicious with this!
You need:
1 egg yolk
40g double cream
30g whole milk
Splash of vanilla extract
20g caster sugar
25g lemon curd
Zest of 1/2 lemon
2 slices of bread (I tested it with brioche and with a standard white bread and both worked great- the weight will vary but around 50-65g)
optional: a little demerara sugar
Anweisungen
Preheat your oven to 180ºC. Place a small ovenproof dish onto your scales then weigh in all the ingredients apart from the bread. Mix together until you have a smooth custard. Chop your bread into small 2cm squares then add them to your custard mixture. Squish and mix everything together so the bread is fully covered in the custard and absorbs most of it. If you have any demerara sugar then sprinkle a little over the top and bake for 25-30 minutes until golden and slightly firm to the touch. Serve with cream, ice cream or custard. Enjoy✨
