For regular sized pie:
Store-bought premade pie crust
300g silken tofu (ready to eat cold)
300ml regular fat coconut milk (coop prix garantie works great)
Sugar or maple syrup, and salt to taste
Different flavouring options: 2 packs vanilla sugar / teaspoon gochujang / infuse the coconut milk with black tea / citrus zest / ...
300g 60% dark chocolate (I use Peruvian 60% "J. D. Gross" from Lidl)
Anweisungen
1. Blind bake the pie crust until golden brown. Usually around 200C for 20-25 minutes, the first 15-20 minutes with baking beans as weights.
2. Blend all other ingredients except for the chocolate until smooth mixture.
3. Melt chocolate over a water bath.
4. Incorporate filling ingredients and pour them into the form.
5. Chill in refrigerator for at least 2h until set.
6. Serve with whipped cream (I prefer soft peaks), ice cream, fresh berries, nuts, or other toppings of your choice
