Steamed Buns with Braised Pork — Warm, Fluffy, and Full of F

Zutaten

For the Filling:

1 lb pork, 30% fat & 70% lean meat (500g)

1 tsp salt (5g)

1 tsp sugar (5g)

1 tsp chicken powder (5g)

2 tsp oyster sauce (10g)

1 tbsp + 2 tsp sweet bean sauce (25g)

2 tsp dark soy sauce (10g)

2 tsp light soy sauce (10g)

1 tbsp minced ginger (8g)

1/2 tsp white pepper powder (1g)

3/4 cup chopped green onion (100g)

Taste and tweak the seasonings as you go, or swap in different sauces or aromatics for fun variations.

For the Dough:

3⅓ cups all-purpose flour (400g)

1 tsp sugar (5g)

3/4 tsp instant yeast (2.5g)

1 ½ tsp cooking oil (8g)

3/4 cup + 1 tbsp water (200ml)

Anweisungen

Prepare the Filling:

Heat some oil in a pan over low heat and caramelize the sugar.

Add the ground pork and fry until cooked.

Add the seasonings and adjust to taste.

Remove from heat, add chopped green onions, mix well, and refrigerate while you prepare the dough.

Prepare the Dough:

In a bowl, combine the flour, sugar, yeast powder, oil, and water.

Knead until you get a smooth dough.

Divide the dough into equal pieces.

Roll out each piece, add the filling, and wrap it up.

Rest the Dough:

Cover the buns with plastic wrap and let them rest at room temperature for 1.5 hours, or until they double in size. The dough should spring back when pressed.

Steam the Buns:

Steam the buns for 17 minutes once the water boils.
