Sweet Potato, Quinoa & Butter Bean Bowl

Zutaten

  • 1 medium sweet potato, peeled and diced small

  • 15 ml olive oil (for roasting)

  • Salt and pepper, to taste

  • 5 g garlic powder

  • 5 g onion powder

  • 5 g smoked paprika

  • 45 g quinoa

  • 30 g rocket

  • 100 g grilled bell pepper, chopped

  • Juice of ½ lemon

  • 10 ml olive oil (for rocket)

  • 100 g hummus

  • 400 g butter beans, drained and rinsed

  • 30 g pomegranate seeds

Anweisungen

  1. Preheat oven to 200°C

  2. Place diced sweet potato and butter beans on a lined baking tray

  3. Add garlic powder, onion powder, smoked paprika, salt and pepper

  4. Drizzle with 15 ml olive oil and toss to coat

  5. Roast for 30–35 minutes

  6. Rinse quinoa and place in a small pot with 120 ml water

  7. Bring to a boil, then reduce heat to low and cover

  8. Cook until water is absorbed and quinoa is fluffy

  9. In a bowl, combine rocket, lemon juice, a pinch of salt and 10 ml olive oil

  10. Toss to coat and soften the leaves

  11. To serve, spread hummus on the bottom of a bowl

  12. Top with quinoa, rocket, roasted sweet potato and beans, grilled bell pepper and pomegranate seeds
