Sticky Mango Aubergines

2-3 large aubergines

150g tahini

4 tbsp sesame oil + extra for frying

1 tsp ginger (crushed)

1 tsp garlic (crushed)

2 tbsp soy sauce

2 tbsp mango chutney

2 tbsp sriracha

1 tbsp rice vinegar

1 spring onion (sliced)

1 small chilli (sliced)

sesame seeds

peanuts

sumac

Anweisungen

Stab the aubergines and optionally rub with oil, then bake at 180°C until soft (about 30-40 mins)

Prep the whipped tahini by mixing in the sesame oil and tahini in a bowl, and slowly adding water until emulsifies.

Make the mango sauce by adding more sesame oil to a pan, with ginger, garlic, soy sauce, mango chutney, sriracha and rice vinegar. Heat for 2 mins until combined.

Lay the cooked aubergines on a bed of the tahini, and top with the mango sauce, spring onions, chillis, peanuts and sumac (optional) and enjoy
