Pomegrante + Wild Rice Salad

•1 cup cooked wild rice (cooled)

•2 cups kale (chopped, massaged with olive oil to soften)

•½ cup pomegranate seeds

•¼ cup toasted almonds (sliced or chopped)

•¼ cup crumbled feta cheese (optional)

•1 orange (segmented or diced)

Dressing:

•3 tbsp olive oil

•1 tbsp pomegranate molasses

•1 tbsp honey or maple syrup

•1 tbsp lemon juice

•Salt and pepper to taste

Anweisungen

  1. In a large bowl, combine wild rice, kale, pomegranate seeds, almonds, and orange pieces.

  2. In a small bowl, whisk together the dressing ingredients.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Serve immediately or refrigerate for up to 1 day.
