Crispy Smashed Parmesan Broccoli

Zutaten

1 large crown broccoli, washed and cut into florets

1/4 cup olive oil

1 tsp garlic powder

1 tsp kosher salt

1/2 tsp ground black pepper

3/4 cup freshly grated parmesan

High protein ranch dip

1 cup cottage cheese (@good_culture)

3/4 cup greek yogurt

1/4 cup chicken broth

3 cloves garlic

1 tb dried dill

1 tb dried parsley

1 tsp onion powder

Anweisungen

Bring water to a boil, and add the broccoli florets. Let boil for about 3-4 minutes, do not leave on longer than that, or the broccoli will be mushy, then add to an ice bath to stop the cooking process. Remove broccoli from water and dry with a paper towel, gently removing as much liquid as possible. Next, preheat oven to 425F. Add grated parmesan in an even layer on a parchment lined baking sheet. Line up the broccoli and smash with the bottom of a cup. Brush generously with the olive oil and sprinkle the seasonings on top. Bake for 25-30 minutes, then remove from oven. Finally, make the dip—add all ingredients to a blender and blend until smooth. Dip broccoli in the dip and ENJOY!!!!!
