Winter Warmers, Meals to Warm Your Bones on Cool Weather Day

3 tablespoons butter, divided
1/2 medium red onion, very finely diced
2 teaspoons minced thyme leaves
3 garlic cloves, minced
2 pounds freshly ground beef, best quality
2 teaspoons dijon mustard
2 tablespoons minced chives
Sea salt and cracked black pepper
2 tablespoons neutral oil
3 sprigs rosemary
3 garlic cloves, whole
Sauce
1 1/2 tablespoons black peppercorns, bashed in a mortar and pestle
4 tablespoons butter, divided
2 large shallots, peeled and diced
4 garlic cloves, minced
¼ cup your favorite whiskey
1 1/2 cups beef stock
1 1/2 cups heavy (whipping) cream
Sea salt
1/4 cup minced chives
Lemon wedges, crispy fries, and veggies, to serve

Heat a skillet over medium-heat, melt 1 tablespoon butter then add the onion, thyme, garlic, a pinch of salt, and cook until softened, about 5 - 6 minutes. In a bowl, combine the beef, onion mixture, dijon, chives, and a generous hit of salt and pepper, then shape and form into 4 - 6 large patties. Awesome.
In a large skillet, add the peppercorns and toast for 1 minute, until fragrant. Add the butter and let melt, then add the shallot and cook until softened, about 5 minutes, stirring. Add the garlic, then remove from the heat, add the whiskey, very very carefully ignite (please be careful here), then cook until almost entirely evaporated. Add the beef stock, cream, season with salt to taste, then cook until thickened and reduced.
Plate up the sauce and beef with fries or veggies, extra sauce, lots of chives, and lemon wedges, to serve. Delicious!
